Description

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup fresh salsa
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper in a baking dish. Spread them out in a single layer for even roasting.
  3. Roast the potatoes for 25-30 minutes until golden and tender, flipping halfway through for perfect crispiness.
  4. While the potatoes are roasting, cook the ground beef in a skillet over medium heat until browned. Drain any excess fat, then stir in the taco seasoning along with a splash of water. Let it simmer for about 5 minutes to infuse those delicious flavors.
  5. Once the potatoes are done, assemble the bowls by layering in this order: roasted potatoes, seasoned beef, fresh salsa, corn, a sprinkle of cheese, and top it all off with the creamy avocado.
