Instructions
- Preheat the oven to 425°F (220°C).
- Toss the diced potatoes with olive oil, salt, and pepper in a baking dish. Spread them out in a single layer for even roasting.
- Roast the potatoes for 25-30 minutes until golden and tender, flipping halfway through for perfect crispiness.
- While the potatoes are roasting, cook the ground beef in a skillet over medium heat until browned. Drain any excess fat, then stir in the taco seasoning along with a splash of water. Let it simmer for about 5 minutes to infuse those delicious flavors.
