- 1 package potato gnocchi
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 cup grated parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pan over medium heat.
- Add minced garlic and sauté until fragrant, about 1-2 minutes.
- Stir in chopped sun-dried tomatoes and cook for a few minutes until softened.
- Pour in the heavy cream and bring to a gentle simmer.
- Add the gnocchi and cook according to package instructions until tender, about 2-3 minutes.
- Stir in fresh spinach and parmesan cheese until the spinach wilts and the cheese melts.
- Season with salt and pepper to taste.
- Serve warm with a sprinkle of extra parmesan on top.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Warm gently with a splash of milk to restore creaminess.
