Description

A creamy and cozy gnocchi dish that wraps you in warmth, perfect for impressing loved ones or treating yourself.


Ingredients

  • 1 package potato gnocchi
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Stir in chopped sun-dried tomatoes and cook for a few minutes until softened.
  4. Pour in the heavy cream and bring to a gentle simmer.
  5. Add the gnocchi and cook according to package instructions until tender, about 2-3 minutes.
  6. Stir in fresh spinach and parmesan cheese until the spinach wilts and the cheese melts.
  7. Season with salt and pepper to taste.
  8. Serve warm with a sprinkle of extra parmesan on top.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Warm gently with a splash of milk to restore creaminess.
