Ingredients

- 500 g chicken breasts
- 60 ml lemon juice
- 30 ml olive oil
- 3 cloves garlic, minced
- 100 g feta cheese, crumbled
- 250 g cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 small red onion, thinly sliced
- 30 g fresh parsley, chopped
- 150 g quinoa, uncooked
- Salt to taste
- Pepper to taste
Instructions
- Cook the quinoa according to package instructions.
- Whisk together lemon juice, olive oil, minced garlic, salt, and pepper.
- Marinate chicken breasts in the mixture for at least 30 minutes.
- Grill or pan-cook the chicken until fully cooked.
- Slice the chicken and set aside.
- In serving bowls, layer cooked quinoa, diced cucumber, halved tomatoes, and sliced onion.
- Top with sliced chicken, crumbled feta, and parsley.
- Drizzle remaining marinade on top if desired and serve.
