Description

A comforting bowl filled with bright Mediterranean flavors, featuring marinated grilled chicken, quinoa, fresh vegetables, and feta cheese.


Ingredients

  • 500 g chicken breasts
  • 60 ml lemon juice
  • 30 ml olive oil
  • 3 cloves garlic, minced
  • 100 g feta cheese, crumbled
  • 250 g cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 small red onion, thinly sliced
  • 30 g fresh parsley, chopped
  • 150 g quinoa, uncooked
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the quinoa according to package instructions.
  2. Whisk together lemon juice, olive oil, minced garlic, salt, and pepper.
  3. Marinate chicken breasts in the mixture for at least 30 minutes.
  4. Grill or pan-cook the chicken until fully cooked.
  5. Slice the chicken and set aside.
  6. In serving bowls, layer cooked quinoa, diced cucumber, halved tomatoes, and sliced onion.
  7. Top with sliced chicken, crumbled feta, and parsley.
  8. Drizzle remaining marinade on top if desired and serve.

Notes
