Description

Delight in these warm and crispy Mediterranean Quesadillas filled with creamy mozzarella, tangy feta, and fresh spinach—a perfect weeknight meal or snack.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. Combine the mozzarella cheese, feta cheese, spinach, diced tomato, sliced red onion, and black pepper in a mixing bowl. Mix well, letting the flavors intermingle.
  2. Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture on half of the tortilla. Fold it over gently to cover the filling.
  3. Heat a non-stick skillet over medium heat and add the olive oil, allowing it to warm.
  4. Place the filled tortilla in the skillet. Cook for about 3-4 minutes until the tortilla is golden brown and crispy.
  5. Flip the quesadilla carefully and cook for another 3-4 minutes until both sides are beautifully golden.
  6. Remove from heat, slice into wedges, and serve warm with a sprinkle of extra feta or a splash of hot sauce if desired!

Notes

Make the filling a day in advance and store it in the fridge. Leftover quesadillas can be stored for up to three days and reheated for best texture.
