- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- Combine the mozzarella cheese, feta cheese, spinach, diced tomato, sliced red onion, and black pepper in a mixing bowl. Mix well, letting the flavors intermingle.
- Lay one tortilla flat on a clean surface and place one-fourth of the filling mixture on half of the tortilla. Fold it over gently to cover the filling.
- Heat a non-stick skillet over medium heat and add the olive oil, allowing it to warm.
- Place the filled tortilla in the skillet. Cook for about 3-4 minutes until the tortilla is golden brown and crispy.
- Flip the quesadilla carefully and cook for another 3-4 minutes until both sides are beautifully golden.
- Remove from heat, slice into wedges, and serve warm with a sprinkle of extra feta or a splash of hot sauce if desired!
Notes
Make the filling a day in advance and store it in the fridge. Leftover quesadillas can be stored for up to three days and reheated for best texture.
