Ingredients

- 2 cups corn (fresh or canned)
- 1 cup cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/2 cup diced red onion
- 1/4 cup chopped cilantro
- 1 jalapeño, diced (optional)
- 1 teaspoon chili powder
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Combine the cream cheese, sour cream, mayonnaise, chili powder, lime juice, and mix until smooth and creamy.
- Stir in the corn, cheddar cheese, red onion, cilantro, and jalapeño (if using).
- Season with salt and pepper to taste, adjusting the flavors as desired.
- Transfer your mixture to a stovetop or crockpot. Heat on medium until warmed through, or in a crockpot on high for about 1 hour.
- Garnish with additional cilantro and cheese if desired. Serve with tortilla chips for dipping.
Notes
Customize with crispy toppings, diced avocado, or different cheeses for a personal touch. Store leftovers in an airtight container for up to 3 days.
