Description

A creamy, cheesy dip inspired by the flavors of Mexican street corn, perfect for any gathering.


Ingredients

  • 2 cups corn (fresh or canned)
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, diced (optional)
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Combine the cream cheese, sour cream, mayonnaise, chili powder, lime juice, and mix until smooth and creamy.
  2. Stir in the corn, cheddar cheese, red onion, cilantro, and jalapeño (if using).
  3. Season with salt and pepper to taste, adjusting the flavors as desired.
  4. Transfer your mixture to a stovetop or crockpot. Heat on medium until warmed through, or in a crockpot on high for about 1 hour.
  5. Garnish with additional cilantro and cheese if desired. Serve with tortilla chips for dipping.
