Ingredients

- 8 oz pasta (like fusilli or penne)
- 1 cup sweet corn (canned or frozen)
- 1/2 cup cotija cheese, crumbled
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 lime, juiced
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Cook the pasta according to package instructions; drain and let cool.
- Mix together the corn, cotija cheese, mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper in a large bowl.
- Add the cooled pasta to the bowl and stir until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with chopped cilantro before serving. Enjoy!
