Description

Rich, fudgy brownies with a refreshing mint twist, finished with chocolate frosting — perfect for any occasion.


Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup mint chocolate chips
  • 1 cup chocolate frosting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Melt the butter over medium heat in a large saucepan.
  3. Remove the saucepan from heat and stir in the granulated sugar, eggs, and vanilla until well combined.
  4. Mix in the flour, cocoa powder, salt, and baking powder until just combined.
  5. Fold in the mint chocolate chips.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the brownies to cool slightly, then frost with chocolate frosting.
  9. Cut into squares and serve.

Notes

For clean cuts, use a sharp knife and wipe it between each cut. Store leftover brownies in an airtight container at room temperature for up to three days, or in the fridge for up to a week.
