- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream (for ganache)
- 1 teaspoon vanilla extract
Instructions
- Combine the graham cracker crumbs and melted butter in a mixing bowl. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- Beat together the peanut butter and powdered sugar until well blended in another bowl.
- Whip the heavy cream in a separate bowl until stiff peaks form, then gently fold it into the peanut butter mixture until combined.
- Spread the peanut butter mousse over the graham cracker crust, smoothing it out evenly.
- Heat ½ cup of heavy cream until just boiling, then pour it over the chocolate chips in a bowl. Let it sit for a minute before stirring until smooth and glossy.
- Pour the ganache over the peanut butter layer and spread it evenly with a spatula.
- Refrigerate for at least 240 minutes or until set. Serve chilled, and enjoy!
