Instructions
- Combine the peanut butter and honey (or maple syrup) in a large bowl, mixing until smooth.
- Add in the rolled oats, protein powder, chocolate chips (if using), vanilla extract, and salt. Mix until well combined.
- Refrigerate the mixture for about 30 minutes until firm.
- Scoop out small portions of the mixture and shape them into cookies.
- Place the cookies on a parchment-lined plate and refrigerate until firm, about 30 minutes.
