- 2 chicken breasts
- 1 cup tortellini
- 1 cup asparagus, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup pesto sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Parmesan cheese for garnish (optional)
Instructions
- Heat the olive oil in a large pan over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the pan.
- Cook until golden-brown and cooked through, about 6-7 minutes on each side.
- Remove the chicken from the pan and set aside.
- Add the chopped asparagus and halved cherry tomatoes to the pan.
- Sauté for 3-4 minutes until tender.
- Toss in the tortellini and pour the pesto sauce over everything.
- Return the chicken to the pan, cover, and cook for an additional 2-3 minutes.
- Serve warm, garnished with Parmesan cheese if desired.
Notes
Customize with different veggies or proteins as preferred. This dish can also be made ahead of time and stored in the fridge for up to 3 days.
