Description

A warm and comforting dish of golden, tender carrot fries coated in Parmesan, perfect as a snack or side.


Ingredients

  • 2 pounds carrots, peeled and sliced into 1/4 inch thick fries
  • 1 tablespoon oil
  • Salt and pepper to taste
  • 1/2 cup Parmigiano Reggiano (parmesan cheese), grated

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the carrot fries in a large mixing bowl with oil, salt, and pepper until well coated.
  3. Sprinkle the grated Parmigiano Reggiano cheese and mix again to distribute evenly.
  4. Spread the carrot fries in a single layer on a lined baking sheet.
  5. Roast in the oven for about 16-20 minutes, mixing halfway through, until tender and lightly charred.
  6. Serve optionally with chipotle mayo dip and garnish with fresh parsley.
