Ingredients

- 2 pounds carrots, peeled and sliced into 1/4 inch thick fries
- 1 tablespoon oil
- Salt and pepper to taste
- 1/2 cup Parmigiano Reggiano (parmesan cheese), grated
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the carrot fries in a large mixing bowl with oil, salt, and pepper until well coated.
- Sprinkle the grated Parmigiano Reggiano cheese and mix again to distribute evenly.
- Spread the carrot fries in a single layer on a lined baking sheet.
- Roast in the oven for about 16-20 minutes, mixing halfway through, until tender and lightly charred.
- Serve optionally with chipotle mayo dip and garnish with fresh parsley.
