Ingredients

  • 3 cups chopped peaches (about 45 large peaches)
  • 1/4 cup granulated sugar
  • 2 tablespoons fresh lemon juice (or water)
  • 3 tablespoons cornstarch
  • 3/4 cup flour
  • 1/4 cup large flake oats
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/3 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 45 tablespoons cream (or milk)

Instructions

  1. Preheat the oven to 350°F degrees. Line an 8×8 inch pan with parchment paper, leaving an overhang around the edges for easy removal.
  2. Make the shortbread base: In a medium bowl, whisk together 1 1/4 cups all-purpose flour, 1/2 cup powdered sugar, and 1/4 teaspoon salt. Stir in 2/3 cup melted unsalted butter until well combined.
  3. Press the mixture into the bottom of the prepared pan and bake for 15 minutes, or until lightly golden.
  4. Prepare the peach layer: As the base bakes, toss 3 cups of chopped peaches with 1/4 cup granulated sugar, 2 tablespoons of fresh lemon juice, and 3 tablespoons cornstarch until the peaches are evenly coated.
  5. Make the crumble topping: In another bowl, stir together 3/4 cup flour, 1/4 cup oats, and 1/3 cup brown sugar. Then stir in 1/3 cup melted unsalted butter until it resembles wet sand.
  6. Spread the peach mixture evenly over the shortbread base. Next, crumble the oatmeal topping over the peach layer using your palms.
  7. Bake in the preheated oven at 350°F for 35-45 minutes, or until the top is golden brown and the peach filling is bubbly.
  8. Allow the bars to cool fully in the pan.
  9. Make the glaze: In a small bowl, whisk together 1 cup powdered sugar, 1/2 teaspoon vanilla extract, and 4-5 tablespoons cream until smooth. Adjust with more cream or powdered sugar as needed.
  10. Drizzle the glaze over the cooled bars, then slice into squares and serve.

Notes

These bars can be prepared a day in advance for better flavor melding. Store covered in the fridge.
