Ingredients

  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches, diced
  • 1/4 cup honey (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Combine flour, sugar, baking powder, and salt in a large bowl until well mixed.
  3. Cut in the cold butter until the mixture resembles coarse crumbs, with little pea-sized pieces of butter throughout.
  4. Stir in the heavy cream and vanilla extract until just combined—be careful not to overmix!
  5. Fold in the diced peaches, letting those gorgeous pieces mingle with the dough.
  6. Turn the dough onto a floured surface and shape it into a circle about 1 inch thick. Cut into wedges or use a biscuit cutter for uniform shapes.
  7. Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown and fragrant.
  8. Whisk together honey, vanilla extract, and powdered sugar for the glaze until smooth and creamy.
  9. Drizzle the glaze over the warm scones before serving, allowing it to create a beautiful shine as it sets.
