Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Combine flour, sugar, baking powder, and salt in a large bowl until well mixed.
- Cut in the cold butter until the mixture resembles coarse crumbs, with little pea-sized pieces of butter throughout.
- Stir in the heavy cream and vanilla extract until just combined—be careful not to overmix!
- Fold in the diced peaches, letting those gorgeous pieces mingle with the dough.
- Turn the dough onto a floured surface and shape it into a circle about 1 inch thick. Cut into wedges or use a biscuit cutter for uniform shapes.
- Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown and fragrant.
- Whisk together honey, vanilla extract, and powdered sugar for the glaze until smooth and creamy.
- Drizzle the glaze over the warm scones before serving, allowing it to create a beautiful shine as it sets.
