- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup creamy peanut butter
- 1 cup mini peanut butter cups, plus more for topping (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- Melt the butter in a medium pan over low heat and stir in the granulated sugar until combined.
- Mix in the eggs one at a time, followed by the vanilla extract.
- Add the flour, cocoa powder, baking powder, and salt, folding until just combined. Be careful not to overmix!
- Stir in the creamy peanut butter until smooth, then gently fold in mini peanut butter cups, reserving a handful for topping.
- Bake the batter in the prepared pan, topping with reserved cups, for 25-30 minutes until a toothpick comes out with a few moist crumbs.
- Cool in the pan for at least 20 minutes before slicing and enjoying!
Notes
For even more flavor, try adding nuts or a layer of cheesecake on top of the brownies.
