Description

Rich peanut butter cup brownies, combining chocolate and peanut butter for a delightful dessert.


Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup creamy peanut butter
  • 1 cup mini peanut butter cups, plus more for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Melt the butter in a medium pan over low heat and stir in the granulated sugar until combined.
  3. Mix in the eggs one at a time, followed by the vanilla extract.
  4. Add the flour, cocoa powder, baking powder, and salt, folding until just combined. Be careful not to overmix!
  5. Stir in the creamy peanut butter until smooth, then gently fold in mini peanut butter cups, reserving a handful for topping.
  6. Bake the batter in the prepared pan, topping with reserved cups, for 25-30 minutes until a toothpick comes out with a few moist crumbs.
  7. Cool in the pan for at least 20 minutes before slicing and enjoying!

Notes

For even more flavor, try adding nuts or a layer of cheesecake on top of the brownies.
