Description

A delightful and refreshing cocktail combining pineapple and coconut flavors for a tropical escape.


Ingredients

Scale
  • 1 tsp agave syrup
  • 1 tbsp fine sea salt
  • Zest of ½ lime
  • Ice
  • 1 ½ oz tequila (blanco or reposado)
  • ½ oz coconut liqueur (or Cointreau)
  • 1 oz freshly squeezed lime juice
  • 2 oz pineapple juice
  • ¼½ oz agave syrup (or simple syrup)
  • 1 oz canned coconut milk (or ½ oz coconut cream)
  • Garnish: pineapple wedge, lime slice, pineapple leaf (optional)

Instructions

  1. Prep your glass by brushing the rim with agave syrup and setting aside. Mix fine sea salt and lime zest on a small plate, then dip the rim into the mixture to coat. Fill the glass with ice.
  2. Combine tequila, coconut rum, lime juice, pineapple juice, agave syrup, and coconut milk in a cocktail shaker. If the coconut milk is thick, use a milk frother to blend it smoothly.
  3. Add a handful of ice to the shaker and shake vigorously for a few seconds until well mixed.
  4. Strain the mixture into the prepared glass filled with ice.
  5. Garnish with a wedge of pineapple and a slice of lime. Enjoy your tropical escape!

Notes

Make-ahead mix can be stored in the fridge without ice. Consume leftovers within 2-3 days for the best flavor.
