Description

A heartwarming twist on classic chocolate chip cookies, featuring the delightful crunch of Rice Krispies and sweet coconut flakes.


Ingredients

  • 2 cups Rice Krispies cereal
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup sweetened coconut flakes
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. In a medium saucepan over medium heat, melt the unsalted butter. Stir in the brown sugar and granulated sugar until combined and smooth.
  3. Remove the saucepan from the heat and stir in the vanilla extract and large egg until well mixed.
  4. In a large bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Combine the wet and dry ingredients, mixing gently. Then, fold in the Rice Krispies, sweetened coconut flakes, and semi-sweet chocolate chips.
  6. Using a tablespoon, drop portions of dough onto the prepared baking sheet, leaving some space between them for spreading.
  7. Bake in your preheated oven for 10-12 minutes or until the edges are golden brown.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For larger cookies, use a cookie scoop and adjust the baking time slightly.
