- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 2 cups mushrooms, sliced
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the quinoa under cold water. In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
- Meanwhile, in a skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they are golden brown and tender.
- Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
- Once the quinoa is ready, fluff it with a fork and combine it with the sautéed mushrooms and garlic in the skillet. Stir well and season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley for a touch of color and flavor.
