Description

Delicious S’mores Cookie Bars capturing the cozy essence of summer with gooey chocolate and toasted marshmallows.


Ingredients

  • 1 cup Unsalted butter, softened
  • 1 cup Brown sugar, packed
  • 1/2 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Graham cracker crumbs
  • 1 cup Chocolate chips
  • 1 cup Mini marshmallows
  • Extra chocolate chips and marshmallows for topping, to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper.
  2. Cream the softened butter, brown sugar, and granulated sugar in a mixing bowl until creamy.
  3. Add the eggs one at a time and the vanilla extract, mixing until smooth.
  4. Combine flour, baking soda, and salt in another bowl.
  5. Mix the dry ingredients into the wet mixture, then fold in graham cracker crumbs, chocolate chips, and mini marshmallows.
  6. Spread the batter evenly into the prepared dish and top with extra chocolate chips and marshmallows.
  7. Bake for 25-30 minutes until edges are golden and center is set.
  8. Cool in the pan, then cut into squares to enjoy!

Notes

These bars can be made ahead and stored in an airtight container for up to a week. For cleaner slices, cool completely before cutting.
