Delicious S’mores Cookie Bars capturing the cozy essence of summer with gooey chocolate and toasted marshmallows.

- 1 cup Unsalted butter, softened
- 1 cup Brown sugar, packed
- 1/2 cup Granulated sugar
- 2 Large eggs
- 1 teaspoon Vanilla extract
- 2 1/2 cups All-purpose flour
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1 cup Graham cracker crumbs
- 1 cup Chocolate chips
- 1 cup Mini marshmallows
- Extra chocolate chips and marshmallows for topping, to taste
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper.
- Cream the softened butter, brown sugar, and granulated sugar in a mixing bowl until creamy.
- Add the eggs one at a time and the vanilla extract, mixing until smooth.
- Combine flour, baking soda, and salt in another bowl.
- Mix the dry ingredients into the wet mixture, then fold in graham cracker crumbs, chocolate chips, and mini marshmallows.
- Spread the batter evenly into the prepared dish and top with extra chocolate chips and marshmallows.
- Bake for 25-30 minutes until edges are golden and center is set.
- Cool in the pan, then cut into squares to enjoy!
Notes
These bars can be made ahead and stored in an airtight container for up to a week. For cleaner slices, cool completely before cutting.
