Ingredients

- 1 cup sourdough discard
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1 apple, peeled and diced
- 1 egg
- 1/4 cup milk
- Oil for frying
- Powdered sugar for dusting
Instructions
- Combine the sourdough discard, flour, baking powder, cinnamon, nutmeg, salt, and sugar in a bowl until well blended.
- Whisk together the egg and milk in another bowl until smoothly combined.
- Gently combine the wet and dry mixtures, then fold in the diced apples.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil, frying until golden brown, about 2-3 minutes per side.
- Drain the fritters on paper towels to remove excess oil.
- Dust with powdered sugar before serving.
Notes
For variations, try tossing in cinnamon sugar or a maple glaze. Store leftovers in an airtight container for up to two days.
