Description

Delight in these Sourdough Raspberry Lemon Rolls, a cozy treat bursting with the flavors of tart raspberries and zesty lemon, perfect for brunch or snacks.


Ingredients

  • 200 g milk
  • 60 g sourdough starter, active and bubbly
  • 70 g granulated sugar
  • 1 large egg
  • 430 g bread flour
  • 5 g salt
  • 1 stick unsalted butter, room temperature
  • 2 cups frozen raspberries
  • 1/2 cup granulated sugar
  • 2 tsp cornstarch
  • 4 tbs unsalted butter, room temperature
  • 3 oz cream cheese, softened
  • 2 tbs lemon juice (juice of half a lemon)
  • 2 cups powdered sugar

Instructions

  1. Make the Dough: In a large mixing bowl, whisk together the milk, sourdough starter, 70 g sugar, and egg. Once combined, gently fold in the 430 g of bread flour and 5 g of salt. Knead in the stick of room-temperature butter until fully incorporated. Cover the bowl and let it rest for about 240 minutes, or until doubled in size.
  2. Make the Rolls: On a floured surface, roll the dough into a large rectangle. In a separate bowl, combine the frozen raspberries, 1/2 cup sugar, and cornstarch until the berries are well-coated. Spread the berry mixture over the dough, rolling it tightly from one end to the other to form a log. Carefully slice into 12 equal pieces and place them in a greased baking pan. Cover and let rise for another 60 minutes.
  3. Bake and Frost: Preheat your oven to 350°F (175°C). Bake the rolls for 25-30 minutes until golden brown. While they bake, prepare the frosting by mixing the room-temperature butter, cream cheese, lemon juice, and powdered sugar until creamy. Once the rolls cool slightly, drizzle generously with the frosting and enjoy that satisfying first bite!
