Ingredients

- 1 cup rice
- 2 cups chicken or vegetable broth
- 1 can diced tomatoes (14.5 oz)
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a medium saucepan over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in the rice and cook for 2-3 minutes until slightly toasted.
- Add diced tomatoes (with juice), broth, paprika, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low and cover.
- Let it simmer for about 18-20 minutes until rice is tender and has absorbed the liquid.
- Fluff with a fork before serving.
Notes
This dish can be made ahead of time and reheated. Leftovers store well in the fridge for up to 4 days or can be frozen for a month.
