Description

A comforting side dish made with rice, broth, and spices, perfect for any occasion.


Ingredients

  • 1 cup rice
  • 2 cups chicken or vegetable broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the rice and cook for 2-3 minutes until slightly toasted.
  4. Add diced tomatoes (with juice), broth, paprika, cumin, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat to low and cover.
  6. Let it simmer for about 18-20 minutes until rice is tender and has absorbed the liquid.
  7. Fluff with a fork before serving.

Notes

This dish can be made ahead of time and reheated. Leftovers store well in the fridge for up to 4 days or can be frozen for a month.
