Description

Quick and nutritious meal prep bowls featuring savory ground beef, vibrant veggies, and hearty grains, perfect for busy weeknights.

Ingredients

Scale
  • 1 pound ground beef
  • 1 tablespoon soy sauce
  • 1 tablespoon sriracha
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups cooked brown rice or quinoa
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned, about 5–7 minutes. Drain excess fat.
  2. Stir in soy sauce, sriracha, garlic powder, onion powder, salt, and pepper. Cook for an additional 2–3 minutes until fragrant and well combined.
  3. Meanwhile, steam the broccoli and bell peppers until just tender, keeping them vibrant and crisp.
  4. In meal prep containers, evenly divide the cooked brown rice or quinoa, seasoned beef, and steamed vegetables.
  5. Garnish with chopped green onions if desired.
  6. Allow the meal prep bowls to cool, then store them in the refrigerator for up to 5 days.

Notes

Customize with your favorite veggies or grains. Can be made vegetarian with tempeh or tofu.
