- 2 cups water or vegetable broth
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
- Lemon juice (optional)
Instructions
- Rinse the rice under cold water until the water runs clear.
- Heat the olive oil in a pot over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and cook for an additional minute.
- Add the rinsed rice to the pot and toast for 2 minutes.
- Pour in the water or broth, bringing to a boil, then reduce to a gentle simmer.
- Cover the pot and cook for 15-20 minutes until rice is tender.
- Stir in the chopped spinach, seasoning with salt and pepper and lemon juice if desired.
- Fluff the rice with a fork and serve warm.
