Description

An easy weeknight dinner that wraps you up in warmth and love, combining fluffy rice with vibrant spinach.


Ingredients

  • 1 cup white rice
  • 2 cups water or vegetable broth
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste
  • Lemon juice (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Heat the olive oil in a pot over medium heat.
  3. Add the chopped onion and sauté until translucent.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the rinsed rice to the pot and toast for 2 minutes.
  6. Pour in the water or broth, bringing to a boil, then reduce to a gentle simmer.
  7. Cover the pot and cook for 15-20 minutes until rice is tender.
  8. Stir in the chopped spinach, seasoning with salt and pepper and lemon juice if desired.
  9. Fluff the rice with a fork and serve warm.
