Description

A delightful quick bread bursting with the flavors of strawberries and lemons, perfect for any time of the day.


Ingredients

  • 2 cups (240g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 8 ounces (227g) fresh strawberries, hulled and chopped
  • ¾ cup (180mL) milk
  • ½ cup (113g) unsalted butter, melted
  • 1 large egg
  • ½ teaspoon vanilla extract
  • Juice of half a lemon (about 2 tablespoons)
  • Zest of one lemon
  • ¼ cup (50g) granulated sugar (for glaze)
  • Juice of half a lemon (about 2 tablespoons, for glaze)
  • 2 tablespoons (30mL) warm water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or baking spray.
  2. In a large mixing bowl, whisk together the flour, ½ cup granulated sugar, baking soda, and salt until well combined.
  3. In another bowl, gently mix together the chopped strawberries, milk, melted butter, egg, vanilla extract, lemon juice, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients, gently folding them together.
  5. Once combined, transfer the batter into your prepared loaf pan.
  6. Bake for 50 to 60 minutes, or until a toothpick inserted comes out clean.
  7. While the bread cools, whisk together the remaining ¼ cup sugar, the juice of half a lemon, and warm water until smooth.
  8. Slice your gorgeous bread and enjoy!

Notes

This bread can be made ahead and tasted even better the next day. Store in an airtight container at room temperature for up to 4 days.
