- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
- 2 ripe peaches, sliced
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
- Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl.
- Press the crumb mixture into the bottom of the springform pan.
- Beat the softened cream cheese until smooth.
- Add 1 cup of sugar and vanilla extract, mixing until fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream until well incorporated.
- Pour the cheesecake batter over the pressed crust.
- Arrange the peach slices and mixed berries on top.
- Bake for 50-60 minutes or until the center is set.
- Cool to room temperature, then refrigerate for at least 4 hours.
Notes
For best flavor, chill overnight. Use a sharp knife for clean slices.
