Description

A creamy cheesecake layered with fresh peaches and mixed berries, celebrating the essence of summer.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 2 ripe peaches, sliced

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl.
  3. Press the crumb mixture into the bottom of the springform pan.
  4. Beat the softened cream cheese until smooth.
  5. Add 1 cup of sugar and vanilla extract, mixing until fluffy.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Stir in the sour cream until well incorporated.
  8. Pour the cheesecake batter over the pressed crust.
  9. Arrange the peach slices and mixed berries on top.
  10. Bake for 50-60 minutes or until the center is set.
  11. Cool to room temperature, then refrigerate for at least 4 hours.

Notes

For best flavor, chill overnight. Use a sharp knife for clean slices.
