- 1 grilled chicken breast, sliced (or rotisserie chicken)
- 2 tablespoons of creamy basil pesto
- 1 slice of provolone cheese (or cheese of choice)
- Fresh spinach or arugula
- Olive oil or butter for toasting
- Salt and pepper to taste
Instructions
- Prepare your ingredients. If using grilled chicken, slice it into tender pieces.
- Heat a skillet over medium heat and drizzle a bit of olive oil or butter.
- Spread the creamy basil pesto generously over one side of each slice of bread.
- Place one slice of bread in the skillet, pesto side up, and layer on the grilled chicken.
- Sprinkle a slice of provolone cheese over the chicken and top with fresh spinach or arugula.
- Top with the second slice of bread, pesto side down, creating a sandwich.
- Cook for about 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes until the cheese melts.
- Remove from the skillet, slice in half, and enjoy while hot and melty!
Notes
Customize with different cheeses or add spices for a unique twist. Leftovers can be stored for up to 2 days in an airtight container.
