Description

A comforting toasted sandwich filled with succulent chicken, creamy basil pesto, and fresh greens, perfect for a quick and satisfying meal.


Ingredients

  • 2 slices of rustic bread (sourdough or country loaf)
  • 1 grilled chicken breast, sliced (or rotisserie chicken)
  • 2 tablespoons of creamy basil pesto
  • 1 slice of provolone cheese (or cheese of choice)
  • Fresh spinach or arugula
  • Olive oil or butter for toasting
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients. If using grilled chicken, slice it into tender pieces.
  2. Heat a skillet over medium heat and drizzle a bit of olive oil or butter.
  3. Spread the creamy basil pesto generously over one side of each slice of bread.
  4. Place one slice of bread in the skillet, pesto side up, and layer on the grilled chicken.
  5. Sprinkle a slice of provolone cheese over the chicken and top with fresh spinach or arugula.
  6. Top with the second slice of bread, pesto side down, creating a sandwich.
  7. Cook for about 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes until the cheese melts.
  8. Remove from the skillet, slice in half, and enjoy while hot and melty!

Notes

Customize with different cheeses or add spices for a unique twist. Leftovers can be stored for up to 2 days in an airtight container.
