Description

A creamy pasta salad bursting with flavors of summer, featuring Greek yogurt and fresh vegetables.


Ingredients

  • 8 oz pasta (your choice)
  • 1 cup Greek yogurt
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Boil the pasta according to package instructions. Once cooked, drain it and let it cool to room temperature.
  2. Make the dressing: In a large mixing bowl, combine the Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper. Stir until you have a creamy, zesty dressing.
  3. Combine the ingredients: Add the cooled pasta, diced cucumber, halved cherry tomatoes, finely chopped red onion, and fresh dill to the bowl with the dressing.
  4. Toss to combine: Gently toss everything together until all the ingredients are well coated in the dressing.
  5. Chill: Pop the salad in the refrigerator for at least 30 minutes before serving to let the flavors meld together.
