- 8 oz pasta (your choice)
- 1 cup Greek yogurt
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Cook the pasta: Boil the pasta according to package instructions. Once cooked, drain it and let it cool to room temperature.
- Make the dressing: In a large mixing bowl, combine the Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper. Stir until you have a creamy, zesty dressing.
- Combine the ingredients: Add the cooled pasta, diced cucumber, halved cherry tomatoes, finely chopped red onion, and fresh dill to the bowl with the dressing.
- Toss to combine: Gently toss everything together until all the ingredients are well coated in the dressing.
- Chill: Pop the salad in the refrigerator for at least 30 minutes before serving to let the flavors meld together.
