Description
A warm and comforting casserole that combines the flavors of traditional cabbage rolls without the fuss of rolling. Perfect for family dinners and easy weeknight meals.

- 2 small onions, diced
- 1 tablespoon olive oil
- 1 teaspoon minced garlic (or 1 teaspoon garlic powder)
- 1 green bell pepper (can use red or yellow)
- 1 pound of lean ground beef
- 1/2 teaspoon onion powder
- 1/2 teaspoon oregano
- 1/2 teaspoon smoked or sweet paprika
- 1 can diced tomatoes (14 oz can)
- Salt and pepper to taste
- 1/2 a large head of cabbage, chopped into bite-sized pieces
- 1 to 2 cups of shredded cheddar cheese (can use Monterey jack cheese)
Instructions
- Prepare your vegetables: dice the onions and bell peppers, mince the garlic, and chop half of the cabbage into bite-sized pieces.
- Heat the olive oil in a large skillet or Dutch oven over medium heat. Add in the onions and garlic, sautéing them for about 3-4 minutes until fragrant and golden. Toss in the diced bell peppers and continue to cook until softened. Set these delicious aromatic veggies aside.
- Add a bit more olive oil if needed, and brown the ground beef in the same skillet. Break it apart as it cooks until it’s fully browned and no longer pink.
- Stir in onion powder, oregano, paprika, diced tomatoes, plus a pinch of salt and pepper into the beef mixture, blending all the flavors together beautifully.
- Add the chopped cabbage to the skillet, cover, and cook over medium heat for about 10 minutes. Afterward, give it a good stir and let it continue to cook for another 15 minutes until the cabbage is wilted and tender.
- Sprinkle your shredded cheese generously on top, letting it melt into bubbly perfection before serving warm.
Notes
You can prepare the casserole a day in advance. Substituting ground turkey or trying different cheeses can customize this dish to your taste.
