Description

A warm and comforting casserole that combines the flavors of traditional cabbage rolls without the fuss of rolling. Perfect for family dinners and easy weeknight meals.


Ingredients

  • 2 small onions, diced
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic (or 1 teaspoon garlic powder)
  • 1 green bell pepper (can use red or yellow)
  • 1 pound of lean ground beef
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon smoked or sweet paprika
  • 1 can diced tomatoes (14 oz can)
  • Salt and pepper to taste
  • 1/2 a large head of cabbage, chopped into bite-sized pieces
  • 1 to 2 cups of shredded cheddar cheese (can use Monterey jack cheese)

Instructions

  1. Prepare your vegetables: dice the onions and bell peppers, mince the garlic, and chop half of the cabbage into bite-sized pieces.
  2. Heat the olive oil in a large skillet or Dutch oven over medium heat. Add in the onions and garlic, sautéing them for about 3-4 minutes until fragrant and golden. Toss in the diced bell peppers and continue to cook until softened. Set these delicious aromatic veggies aside.
  3. Add a bit more olive oil if needed, and brown the ground beef in the same skillet. Break it apart as it cooks until it’s fully browned and no longer pink.
  4. Stir in onion powder, oregano, paprika, diced tomatoes, plus a pinch of salt and pepper into the beef mixture, blending all the flavors together beautifully.
  5. Add the chopped cabbage to the skillet, cover, and cook over medium heat for about 10 minutes. Afterward, give it a good stir and let it continue to cook for another 15 minutes until the cabbage is wilted and tender.
  6. Sprinkle your shredded cheese generously on top, letting it melt into bubbly perfection before serving warm.

Notes

You can prepare the casserole a day in advance. Substituting ground turkey or trying different cheeses can customize this dish to your taste.
