Description

A comforting vegan dish featuring roasted cauliflower glazed to golden perfection with zesty lemon and sweet maple syrup.


Ingredients

  • 1 large head of cauliflower, cut into bite-sized florets
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 3 tablespoons lemon juice
  • 2 tablespoons maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 teaspoons freshly cracked black pepper
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Toss the cauliflower florets with 2 tablespoons of olive oil and salt in a large bowl until coated.
  3. Spread the florets in a single layer on the prepared baking sheet.
  4. Roast for 20-25 minutes, flipping halfway through until crispy and golden brown.
  5. In a small saucepan, whisk together lemon juice, maple syrup, soy sauce, 1 tablespoon olive oil, black pepper, and minced garlic.
  6. Mix cornstarch with 2 tablespoons of water until smooth, then whisk into the saucepan mixture.
  7. Place the saucepan over medium heat and bring to a simmer, whisking constantly for 1-2 minutes until thickened.
  8. Remove from heat and pour the warm glaze over roasted cauliflower, tossing gently to coat.
  9. Serve immediately for maximum flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven for best texture.
