Description

A delightful and refreshing Watermelon Mochi recipe, perfect for summer gatherings and easy to make with just a few ingredients.


Ingredients

Scale
  • 1 cup watermelon juice
  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 1/4 cup water
  • Cornstarch for dusting

Instructions

  1. Mix the glutinous rice flour and sugar together until well combined.
  2. Gradually add in the watermelon juice and water, stirring until the mixture is smooth.
  3. Pour the mochi mixture into a steaming dish lined with parchment paper.
  4. Steam for about 20 minutes, or until the mochi is set.
  5. Allow to cool slightly, then dust your hands with cornstarch and cut the mochi into bite-sized pieces.

Notes

Make-Ahead: Can be prepared a day in advance. Use fresh watermelon juice for best flavor.
