Description

Delicious and crispy zucchini fritters that are perfect for snacks, appetizers, or side dishes.


Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Mozzarella cheese, shredded
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Grate the zucchinis and squeeze out the excess moisture using a clean kitchen towel.
  2. Combine the grated zucchini, Parmesan cheese, Mozzarella cheese, flour, egg, garlic powder, salt, and pepper in a bowl. Mix until well combined.
  3. Heat oil in a frying pan over medium heat.
  4. Drop spoonfuls of the mixture into the pan and flatten slightly with the back of a spatula.
  5. Cook until golden brown on both sides, about 3-4 minutes per side.
  6. Remove and drain on paper towels to absorb any excess oil. Serve warm.

Notes

You can prepare the zucchini mixture ahead of time and refrigerate it for up to 24 hours before frying. Leftover fritters can be stored in an airtight container in the fridge for 3-4 days.
